Light and Healthy Chicken Salad

Are you like me and you’re just not ready to give up Summer just yet?  Then THIS is the PERFECT recipe for you.  We have been eating this Light and Healthy Chicken Salad recipe for quite some time.  We saw it in a Weigh Watchers Cookbook years ago, but to find the recipe now, is nearly impossible; luckily we pretty much still remember the secret to it!  :)  Over  the years we’ve definitely altered the recipe just slightly from time to time to fit everyone’s needs!  And guess what?  It ALWAYS turns out completely yummy!  :)  It’s so easy to make and taste incredibly delicious! ENJOY! Light and Healthy Chicken Salad Ingredients: 3-4 boneless skinless chicken breasts, cooked and cooled 1/2 c mayonnaise 1/2 c miracle whip 1/3 c celery, finely diced 1/3 c onion, finely diced 1/3 c pecans, chopped 1/2 c red grapes Directions: Make SURE your chicken is NO LONGER warm at all; in fact, we cook our’s the night before and then refrigerate until we’re ready to combine. Combine all ingredients in a large bowl. Make sure everything is evenly distributed. Refrigerate for at least an hour, or over night. Serve over romaine lettuce (if you’re feeling healthy, or with croissants).
